If A Clam Company Hand Shucks Clams?

Hand Shucking is exactly as it sounds. At Lamonica Fine Foods, all clams branded under the LaMonica label are shucked by hand. This provides a more tender, flavorful clam for you to enjoy.

In processing Hand Shucked clams, the meat is removed from the shell by hand, then begins the first of several washing systems. After the first washing, the meat is separated by hand.

The meat is washed through a ripple washer and reel using fresh chilled water. It is hand inspected and put into a grinder, which chops the meat to the correct specification. From the grinder, the meat is cascaded into a series of swirl tanks, where the meat is gently circulated using chilled water. This swirl action forces dense material such as sand into the middle of the swirl where it is removed. The meat then rolls down another ripple washer and into a dewatering reel. It is then re-inspected, packed and placed on ice.

In addition to Hand Shucking at our plant, we have the capability to provide canned, fresh and frozen clam and seafood products. We can Chopped and Minced Clams, Clam Juice, Scungilli and Calamari. We are also an industry leader in Crispy Clam Strips and our newest product, Breaded Mussel Nuggets! We are proud to produce the highest quality products you not only expect but deserve.
